Roasted Ratatouille

I made this recipe for my tea tonight 🙂

It’s a simple way to add flavour to your meals & help towards your 5 A DAY

It only takes 10-15 minutes to prepare and 35 minutes to cook (serves 4)

Ingredients (can be purchased from any supermarket or farm shop etc)

1 onion, 1 courgette, 1 aubergine, 2 peppers

8 sprays of fry light

1 tablespoon of dried mixed herbs

Freshly ground black pepper

400g tin of tomatoes

Steps

1   Peel the onion and cut into 6-8 chunks

2   Wash the courgettes, aubergines and peppers and pat them dry

3   Cut the courgette into 2 cm slices

4   Roughly chop the aubergine into bite-sized pieces

5   Cut the single pepper in half, remove the seeds and chop into bite-sized chunks

6   Put the oil in the roasting tray and add the chopped vegetables.

7   Add the mixed herbs and black pepper and stir well

8   Put the tray in oven and cook at 180 C and bake for 15 minutes or until the vegetables are soft

9   Remove the tray and add the tomatoes, stir well. Cover with foil and cook for another 20 minutes

10 Eat and enjoy

       

  Serving Ideas

Serve with any meat or fish & rice

Top with grilled meat e.g. chicken

Stir and pasta & use as a pasta sauce

Fill wraps with ratatouille & sprinkle low fat cheese

Take leftovers to work for lunch tomorrow
